These tacos are lower in calories, fat, cholesterol, and salt than any fast -
food taco!

For 6 tacos, you will need :

6  whole Tortillas, corn
2  cups Monterey Jack cheese, shredded
1  cup Pinto or kidney beans, home cooked or canned
3  medium Tomatoes (will weigh about 1 lb)
1  medium Onion or a bunch of green onions
1  cup Lettuce, chopped
Salsa (buy salsa or make your own)

1. Preheat your oven to 275 degrees .

2. Wrap the tortillas, still flat, in aluminum foil, and place them in the middle of the center oven rack to make them soft and warm .

3. Put the beans in a medium bowl and mash them with a potato masher or a fork until they look just a little lumpy .

4. Wash the tomatoes. Remove the stems. Cut into little bite-size pieces and put in a small bowl .

5. Wash the onions. Cut them into small pieces and put them into the bowl with the tomatoes .

6. Remove the warmed tortillas from the oven. Put them on dinner plates, smear with beans, and have everyone add their choice of toppings .
